Butternut Squash Coconut Curry

This was inspired from the lovely little butternut squashes at the Farmer's Market last week. I used my recipe: recipe #84474 as a base, switched the sweet potatoes for butternut squash, and added a can of coconut milk, and came up with this! I did take the time to toast and grind whole cumin and corriander, but feel free to use the already-ground versions of these spices as well. Sugar Hill Inn's Raisin Scones

I stayed at this quaint little inn, located in New Hampshire, for several nights and was lucky enough to enjoy their amazing breakfasts. This is just one of their delicious recipes that I know I will be making for years! We had the cranberry scones, so I would substitute cranberries for the raisins in this recipe. The scones were also served with a delicious orange butter. This recipe results in a soft, not-too-sweet scone that absolutely melts in your mouth.I remember course sugar being on top of these scones, which is not mentioned in the recipe. HOLD the cans of soup please! Trust me, you won't want to make chicken pot pie with canned soup again after trying this recipe. It's quick and simple enough for me to make on a weeknight and my family absolutely devours it. I use some fat free ingredients, but you'd never know from the taste. We love the carrots and broccoli, but you can change up the veggies a bit - I like to keep them fresh, but canned peas work well in place of the broccoli. Save time by using leftover chicken too. Bennett's Bean Dip

This is a great bean dip to make for someone who doesn't think they like beans. The recipe calls for Taco Seasoning Mix, but I found a recipe to make my own that tastes better. The measurements on this recipe were not posted in some cases (i.e., large can of refried beans) so I have estimated, but feel free to vary to your liking. Serving size is also estimated.
